Wellness Update

Hello my friends!

I promised an update on our journey of wellness… Cutting out refined sugar.  To be completely transparent and honest, I did cheat – twice 😳. The first cheat was a pumpkin spice iced latte, from a favorite coffee shop that is closing. It’s my favorite pumpkin spice and I measure all pumpkin spice lattes to this one. The second  cheat was at a cook out at our friends, I had a s’more. There it is, I came clean! In my past I would have let these cheats totally knock me off my plan and beat myself up with negative self talk. I allowed myself the cheats and treated myself with grace. It didn’t kill my plan and was able to stay on track.
We are now working on eliminating more of the starchy foods (potatoes mostly, I love a good roasted new potato with herbs). We are thinking up fresh new ideas on preparing vegetables, that will be appealing to the kiddos.

Y’all I’m so proud of my kids! There hasn’t been a loaf of bread in the house for nearly three weeks! No pb&j’s! No pretzels or veggie straws! They are all three being more active and willing to try new foods.* Big brag on Natalie  (our kiddo still in public school), she has been running laps everyday at recess! This a big thing for her! We are so proud of her healthy choices!

The last couple of days have been a little rough. My hormones are going bonkers and chocolate is on my mind! To help with the cravings,  I made an apple crisp the other night. We went and picked apples on Labor Day and thought that these beauties would make a delicious and healthy treat! The cobbler was grain free and sweetened with some honey.

I have been in a rut with breakfast. A girl can only eat so many scrambled eggs! This mock pancake is a tasty change of pace!

Mock Pancakes

  • 1 whole egg
  • 2 egg whites
  • 1 TB ground flaxseed
  • 1 TB almond meal
  • 1 packet of Stevia
  • 1 tsp cinnamon
  • A dash of nutmeg
  • A drop of vanilla
  • 1 Granny Smith Apple (or apple of choice)
  • Cinnamon and 1 packet of Stevia

Peel and thinly slice the apple. Combine apple with some cinnamon and a packet of stevia. Warm up your frying pan (medium high heat) add butter or coconut oil to the pan (sometimes I do both), when melted add apple mixture.

Crack eggs into the bowl adding the flax, almond meal, cinnamon, stevia, and vanilla and whip with a fork.

When the apples are softened turn down the heat to low and add the egg mixture. Cover and let stand for a few minutes. When mostly firm, flip over to finish cooking through. If allowed on your eating plan top with a little honey or pure maple syrup.

    1. I really should update everyone. I had gotten off track again. I am making baby steps to getting things under control. When life gets busy and stressful, Discipline goes out the door. Back to eggs and lots of good healthy fats and veggies! Thanks for stopping by!
